This is perfect spaghetti for when you want to make something quick but impressive! Calabrian chili paste is an easy substitute for whole peppers if you're in a pinch.

Ingredients

200 grams spaghetti, dry

3 tbsp olive oil

2 cloves garlic, minced

3 tbsp Calabrian chili peppers, finely chopped (about 4 small peppers)

2 tbsp tomato paste

½ cup parmesan cheese, freshly grated, plus more for serving

2 tbsp fresh parsley, finely chopped, plus more for serving

Salt & pepper, to taste

Directions

Step 1

Boil the spaghetti according to the directions on the package. Reserve 1 cup of the starchy cooking water before draining.

Step 2

Meanwhile, heat the olive oil in a large skillet over medium. Add the garlic, Calabrian chili peppers, and tomato paste and cook for 3 minutes. Stir frequently.

Step 3

Add the cooked spaghetti, parmesan cheese, and 1/2 cup of the starchy cooking water. Toss the pasta gently until the cheese has melted and the sauce has thickened. Add more pasta water if the sauce gets too thick.

Step 4

Remove from heat and add the parsley, salt and pepper. Stir to combine.

Step 5

Serve immediately with more parsley and parmesan cheese sprinkled over top. Enjoy!
